Job Description
The Head Chef – Japanese Cuisine is responsible for leading the Japanese kitchen operations, ensuring the highest standards of authenticity, quality, and consistency across all offerings. This role drives culinary excellence, innovation, cost control, and team development while delivering exceptional guest experiences aligned with the hotel’s brand standards.
Qualifications
- Open for both Local Hire (Foreign National) Local Expatriate Assignment candidates & National Talent , subject to applicable work permit and immigration regulations.
- Mastery in Japanese culinary techniques, including:
- Teppanyaki & Hot Japanese cuisine preparation
- Knife skills and meat/fish handling
- Hot kitchen specialties (tempura, robatayaki, teppanyaki, donburi, etc.)
- Strong knowledge of Japanese ingredients, seasonality, and authenticity standards
- Menu engineering, costing, and kitchen financial control
